Our workflow has been to create a release branch when we make a release.  We then port crucial bug-fixes to the release branch.  Our day-to-day development takes place on the trunk, which can sometimes be unstable.

If we were ever to convert completely to git, I would suppose that we'd want to maintain some sort of similar setup.
